Everyone always says "Kelly makes the best marcaroni & cheese", and they always ask me to bring it to our family gatherings.
I made it this weekend for my Aunt Terri and Uncle Mark's 25th Anniversary party, and thought I'd share the recipe.
I got the recipe from Janelle, my BFF from middle school. I've got to take a recent pix of her so I can post it.
Here is Janelle's Infamous Mac -N - Cheese Recipe:
1 lb. bag of macaroni
1/2 sleeve Ritz or Town House crackers
1/3 log Velveeta Cheese
1 1/2 Cups Cottage Cheese
1/2 Stick Butter
2 Cups Shredded Cheddar Cheese.
1/2 - 1 Cup Milk
Salt & Pepper to taste.
Cook macaroni in boiling water. In a separate bowl while your macaroni is cooking, crush crackers. Cut Velveeta Cheese and butter into 1/2" squares. Add cottage cheese, cheddar cheese, milk, salt and pepper.
Drain cooked macaroni. Add macaroni to other ingredients. Stir, and pour into casserole dish:
Bake at 350 degrees for 40-45 minutes.
