It was cold this morning, and I had a "hankering" for some home-made veggie soup. So, this afternoon, I went to work:
The Recipe
2 lbs Top Sirloin Steak
1 small white onion
4 small potatoes
1 lb. bag of Petite Frozen Veggies
2 - 28 oz. cans of diced tomatoes
1 cup frozen lima beans (optional)
1 tbsp. Kosher salt
1/8 tsp. pepper
Trim meat and cut into 1/2" to 1" squares (it cuts much easier if it's partially frozen). Brown meat and onion with salt and pepper. Add tomotoes plus two cans of water, potatoes, and veggies. Simmer on medium heat for about one hour.
While my soup was simmering and my bread was rising:
I set the table with my other favorite set of dishes. My mom bought me these a few years ago for Christmas, and I love them (Thanks Mom):
After the bread was baked:
and the soup was ready:
We all sat down for a yummy, but very healthy dinner.
And, then, spoiled it all with this for dessert:
