We love the long, sunny days of summer! Somehow, the cooking seems a bit more simple for us in the summer, yet even better tasting – I think – than the more complex food of winter. Our favorite dessert in the summer is so simple – Chocolate Liqueur Fondue
served with fresh fruit, and Barefoot Contessa's Shortbread.
1 ½ Cups Semi-Sweet Chocolate Chips
1/3 to 1/2 Cup Milk (we use Almond Milk, but regular will do just fine)
2 Tbsp. Amaretto (or your favorite flavored liqueur)
Place all ingredients in a microwave safe bowl, starting with 1/3 cup of milk. Microwave for 30 seconds, and stir. Microwave in 15 second intervals, and stir. Be sure not to over-cook your chocolate. I often stop when the chips are not quite melted, and continue to stir as they finish melting. We like our fondue a little thick, but if this is too thick for your taste, add milk a teaspoon at a time to get to your preferred consistency. Serve with your favorite summer fruits.
Note: Cover and store any left-over fondue in the fridge. It reheats very nicely (15 to 30 seconds), and is just as tasty left-over.
Though our favorite is the shortbread, we've also served it with brownies, pretzels, or chocolate chip cookies. As for liqueur, it depends on our mood. Here are a few other liqueurs we've tried and really enjoyed: Grand Marnier, Peppermint Schnapps, Kahlua, Raspberry Liqueur
It's not just our desserts that are simplified, but dinner, too! I thought I'd share a few of our favorites with you. Barefoot Contessa's Linguine with Shrimp Scampi and Garlic Bread are the perfect meal for four:

This past weekend, we had Barefoot Contessa's Tomato, Mozzarella & Basil Salad with fresh basil from the garden – truly a super simple favorite!
And, last night, we had seared salmon with a cream dill sauce, and Caesar Salad
So simple, yet so, so good! Sorry, no recipe for the salmon – it was a McStudly original! He's master of cooking the meat at our house, but doesn't "do" recipes :0)!!
And, it's not just the cooking, but life seems a bit more simple in the summer! Maybe it's the gardening and playing in the earth, or it could be all of the sunshine, or the water. But, I think it's mostly times like this
They don't happen nearly as often as I'd like (it seems like we're busy and on the go so much of the time), so I treasure these relaxing, cool summer evenings hanging out on the porch laughing with McStudly and the kids. And the long, hot summer afternoons hanging with the kiddos
and the McStudly and doing absolutely nothing
because, well, it's truly nourishing to my soul!
